A Terrific Threesome For Tea

 

Inspired by our contest winner Shireen Ann Pereira, this week’s episode features a recipe of not one, not two… but a terrific threesome of tasty, tangy flavours! Savour these fragrant lime and lemongrass scones generously topped with beautifully caramelised pineapple and have yourself a wonderful teatime treat!

RECIPE

Makes 6 scones
Preparation Time : 45minutes


INGREDIENTS:

Scones

  250g Flour (plus extra for dusting)
  1 1/2 Tsp Baking Powder
    15g Caster Sugar
        1 Tsp Salt
        2 Limes (Zest)
        1 Stick of Lemongrass
    80g Unsalted Butter (cold)
150ml Whole Milk
        1 Egg

Caramelized Pineapple

        1 Pineapple
    20g Brown Sugar
    50g Butter
        1 Pinch of Salt

METHOD:

Scones

1. Whisk together flour, baking powder, 1 tsp salt and sugar.
2. Zest limes and grate lemongrass. Add grated items into the flour mixture.
3. Using your hands, rub the butter into the flour mixture until you have a crumb like texture.
4. Pour milk into mixture and knead until fully combined. Then flatten it.
5. Using a cookie cutter, cut out circles from the dough.
6. Use egg as a wash to add colour to the scones before baking.
7. Bake in a preheated 190C oven for 15 – 20 minutes.

Caramelized Pineapple

1. Cut pineapple into desired size.
2. Melt butter, brown sugar & a pinch of salt together.
3. Cook pineapple in mixture until it turns brown.
